1. Aluminium

This is one of the most common metals used nowadays to make cookware. However, I don’t recommend buying a pan or any other utensil for that matter made using this metal.

There has been some research going on for a while now on whether aluminium is harmful to humans. Some research does show that using aluminium cookware on a regular basis may cause diseases like Alzheimer’s. You can read more about the same here.

 

2. Hard Anodized

Hard anodized aluminium is made using a process that oxidizes the outer layer of aluminium to make it rust proof. Use of hard anodized metal is considered better compared to cooking directly using aluminium.

However, since you are planning on buying completely new cookware. I recommend avoiding hard anodized cookware too.

 

3. Non-Stick Coating

Non-stick cookware is a term used for any cookware of which the surface is coated with a material called Teflon also called as polytetrafluoroethylene (PTFE). This product is safe to use unless the surface temperature reaches 570°F or 300°C.

However, it can also be harmful to your health if the surface develops any types of cracks. You also need to take care of the surface while cooking and should avoid the use of metal spatulas. For these reasons, I personally don’t prefer to use non-stick cookware in my kitchen.

 

4. Cast Iron pans or skillets

This is the metal that I prefer for cooking these days. It takes some extra time and effort to keep your cast iron cookware seasoned properly. Once you master this technique, you will love cast iron.

Cast iron cookware takes a little more time to heat up but then it cooks your food beautifully.

5. Stainless Steel

This is another safe metal that you can use for cooking. You can also season your stainless steel pans in a similar way as shown in the video below.

Steel is much lighter compared to iron and hence easier to handle. The utensils also look better.

However, cheaper steel vessels do not distribute the heat evenly and hence might cause your food to burn in certain high heat areas. Hence, I recommend buying good quality steel cookware with heavier bottoms.

6. Copper

Not a very popular choice these days. However, it is wonderful to cook using this metal. It heats up quickly and also retains heat well.

The only drawback is that copper reacts with acidic food and hence you cannot cook anything that has a lot of sourness in it.

Now, this is more of a product that I personally use. I have multiple cast Iron cookware in my kitchen. I have slowly replaced all my regular non-stick & aluminium cooking pots with them over the last 5 years.

As I said earlier, my second choice after cast Iron would be to opt for stainless steel utensils.

The last option on the list is one more budget option. I have personally used this particular pan too and hence can say that cooks really well.

The trick to making food “not” stick to the pan is that the pan should be nice and hot before you add ghee or oil to it. You should also let the ghee/oil heat up nicely before frying food in the pan. If you follow this, I can assure you that you will not have the problem of food sticking to your frying pan.
